In short
Wholesale chicken in Australia is bought as whole birds graded by size, as portions such as breast fillet, thigh fillet, drumsticks and wings, or as mechanically deboned meat (MDM) for manufacturing. Most product is packed in cartons, chilled or frozen, and frozen portions may be individually quick frozen (IQF). On Protein Link, verified suppliers list chicken in a structured format and approved buyers order it at one clear price per kilogram, ex GST.
Common wholesale chicken formats
- Whole birds, graded by size, for rotisserie, retail and foodservice.
- Breast fillet: skin-on or skinless, often with a weight range per fillet.
- Thigh fillet: skin-on or skinless, bone-in or boneless.
- Drumsticks, marylands and wings (whole, wingettes or drumettes).
- Mechanically deboned meat (MDM) for sausages, nuggets and processed foods.
- Frames, necks and other by-products, including pet food inputs by arrangement.
Sizing and specification
Whole birds are sold by size grade, which corresponds to the bird’s weight. Portions are usually specified by a weight range, such as fillets above a minimum gram weight, so a kitchen can control plate cost and cooking time.
Because chicken is so price-sensitive, small specification differences (skin on or off, trim level, glaze on frozen product) change the value of a carton. Compare listings on the same specification, not just the product name.
IQF and bulk-packed frozen chicken
Frozen chicken comes in two main forms. Individually quick frozen (IQF) pieces are frozen separately, so a kitchen can take out only what it needs. Bulk or block-packed product is frozen together in the carton and is usually thawed as a whole.
IQF product may carry an ice glaze. Check whether a weight is net of glaze. Our specifications guide explains what to ask.
Who buys wholesale chicken
Restaurants, takeaway chains, caterers and institutional kitchens buy fillets and portions. Food manufacturers buy MDM, thigh and breast meat for processed products. Pet food manufacturers buy frames and by-products. See bulk protein for food manufacturers and pet food manufacturers.
Other poultry
Duck, turkey and other poultry are traded by arrangement where a verified supplier lists them. They follow the same structured listing format as chicken.
Food safety and cold chain
Raw poultry is potentially hazardous food. The Food Standards Code (Standard 3.2.2) requires it to be kept at 5°C or below, or 60°C or above. Chilled chicken has a short shelf life, so delivery timing matters. Frozen chicken should stay frozen through the cold chain until it is thawed under refrigeration.

Frequently asked questions
What does IQF mean on a chicken listing?
Individually quick frozen. Each piece is frozen separately rather than in a block, so you can portion out what you need without thawing the whole carton.
What is MDM chicken used for?
Mechanically deboned meat is recovered from frames after the main cuts are removed. It is used as an ingredient in processed products such as sausages, nuggets and loaves, and in pet food.
Can I buy duck or turkey on Protein Link?
Other poultry is traded by arrangement where a verified supplier lists it. If you have a regular requirement, tell us when you request access.
How short is the shelf life of chilled chicken?
Chilled chicken has a much shorter shelf life than chilled red meat. It varies by product and packaging, so check the production date and use-by information on the listing and plan delivery accordingly.
