Buying guide

Understanding wholesale meat specifications

In short

A wholesale meat specification is the written description of exactly what is being bought: the species and cut, trim and bone status, weight or size range, grade or feed type where relevant, pack format, storage state and labelling. For beef, veal, sheepmeat and goat, the AUS-MEAT language and its Handbook of Australian Meat give the trade a shared set of product descriptions. A clear specification lets you compare offers fairly and resolve disputes quickly.

Why specifications matter

Two suppliers can both offer a cut by the same name and deliver different products. Trim, fat cover, bone, weight range and pack format all change yield and value. Agreeing the specification in writing before the order means both sides are talking about the same product.

The core elements

  • Species and cut name
  • Trim level or fat specification, and chemical lean for manufacturing meat
  • Bone-in or boneless
  • Weight or size range per piece, and count where relevant
  • Grade, feed type or other attributes the buyer relies on
  • Pack format: vacuum-packed, bulk carton, layer pack, carton weight
  • Storage state: chilled or frozen
  • Labelling and date marking requirements

The AUS-MEAT language

AUS-MEAT publishes the Handbook of Australian Meat, an international red meat manual that supports accurate product descriptions in domestic and export trade. It is available as a free app covering beef, veal, sheepmeat and goat product descriptions, and AUS-MEAT notes its cut codes align with the UNECE international codes. Using these descriptions, or referencing them in your specification, removes much of the ambiguity in red meat trade.

Pork, poultry and seafood

For pork, poultry and seafood, specifications are commonly set out in the supplier's product specification sheet. Ask for it, and check it covers the same elements: cut or product form, size or count, trim, pack format, storage state and labelling.

Manufacturing meat and trim

Manufacturing meat is typically bought on chemical lean, the proportion of lean to fat, because it determines how the product behaves in the recipe. If you buy trim, state the chemical lean you need and how it will be verified. See our food manufacturers guide.

Writing a specification suppliers can answer

  • Use trade names and reference codes your suppliers already use
  • State tolerances, not just targets, for weight and lean
  • Say what is unacceptable as well as what is required
  • Include how product will be checked on arrival
  • Keep a version of the specification with each order

How Protein Link listings carry the specification

Every Protein Link listing is structured the same way: product, specification, storage state, pack format, volume and one buyer price per kilogram, ex GST. That makes it straightforward to compare stock side by side. Explore wholesale beef or wholesale lamb to see the categories.

Frequently asked questions

What is the Handbook of Australian Meat?

It is AUS-MEAT's international red meat manual of product descriptions for beef, veal, sheepmeat and goat, published as a free app and used in domestic and export trade.

What does chemical lean mean?

Chemical lean is the proportion of lean meat to fat in manufacturing meat or trim. Manufacturers use it to control how the meat performs in a recipe.

Should a specification include tolerances?

Yes. A target weight or lean figure without an accepted range invites disputes. State the acceptable range and how it will be measured.

Who is responsible for product matching the specification?

The supplier is responsible for supplying product to the agreed specification. On Protein Link, suppliers remain responsible for product quality.
