Cold chain guide

Chilled vs frozen wholesale meat: which should you buy?

In short

Buy chilled when you will process or sell the product soon and need it ready to use; buy frozen when you need a longer storage window, more flexibility on timing or access to stock that only trades frozen. Chilled product should be received at 5°C or colder and frozen product frozen hard. The right choice depends on your turnover, storage capacity, processing method and how far the product travels.

What chilled and frozen mean in practice

Chilled meat is held cold but not frozen. Raw meat and poultry are potentially hazardous foods, and FSANZ guidance is to keep them at 5°C or colder. Frozen meat is held frozen solid; FSANZ transport guidance is that frozen food should stay frozen hard.

When chilled makes sense

  • You turn stock over quickly, such as a busy butcher or a kitchen with daily prep
  • The product is sold or presented fresh and the buyer expects it
  • You need to process immediately without a thawing step
  • Your delivery route is short enough to keep the chilled window workable

When frozen makes sense

  • You want to buy in larger lots and draw down over time
  • Your production runs are scheduled and benefit from stock on hand
  • The line is seasonal or only trades frozen, including many seafood and imported lines
  • You are buying excess stock that a supplier has frozen to extend its window

Storage and handling

Frozen stock needs freezer space and a controlled thawing process, which takes time and floor space. Chilled stock needs coolroom capacity and tighter rotation. Before you choose a format, check you can store the volume you plan to buy at the right temperature for as long as you will hold it.

Shelf life and date marking

Packaged food carries a use-by or best-before date set by the supplier. FSANZ explains that food must not be sold after its use-by date, and that suppliers must include any storage conditions needed for the product to keep until its date. Freezing does not change what is printed on the label, so ask the supplier how dates apply to product frozen down from chilled.

Freight differences

Chilled and frozen loads travel under different temperature settings and should not be treated as interchangeable. Ask your carrier how it handles each state and whether mixed loads are separated. Our refrigerated freight guide covers what to confirm.

Receiving checks

FSANZ receiving guidance is to check chilled food arrives at 5°C or colder and frozen food arrives frozen hard, and to agree delivery temperatures or a safe time period with your delivery business. Keep the product under temperature control as soon as you have received it.

How storage state shows on Protein Link

Every Protein Link listing states its storage state, chilled or frozen, alongside product, specification, pack format and volume, and fulfilment is coordinated around it. Browse frozen lines on our frozen meat page.

Frequently asked questions

What temperature should chilled wholesale meat arrive at?

FSANZ guidance is that chilled potentially hazardous food, which includes raw meat and poultry, should be delivered at 5°C or colder.

Is frozen meat lower quality than chilled meat?

Not inherently. Quality depends on the product, how quickly and well it was frozen, how it was stored and how it is thawed. Many lines are traded frozen as standard.

Can chilled and frozen meat travel on the same truck?

That depends on the vehicle and carrier. Each storage state needs its own temperature control, so confirm with the carrier how mixed loads are handled.

Does freezing extend the date on a label?

The date is set by the supplier for the stated storage conditions. Ask the supplier how dates apply to product that has been frozen, rather than assuming.
